Where is he from?
Leonardo is from Chemax, Yucatan about 3 hours away on the way to Merida. It is a city of about 20,000 people. He has a girl friend back home. He is 20 years old and came here 6 years ago. He only has a elementary school education but has a natural talent in the kitchen. Gerardo says “Leonardo has a special knack to taste something and know exactly what it needs.”

What is his position here?
His first job here was at Super Chomak stocking. After 3 months he was promoted to dishwasher. After he was done washing dishes he would stay on and help until closing. That willingness to help and hard work earned him a promotion and he has been working in the kitchen taking on more and more responsibilities for the last 5 years.

What is his expertise?
Soups are his expertise. His favorite is the Aztec Tortilla, it takes a lot of ingredients and seasonings but he has the ability to make it just right.

What do he enjoy to do on his time off?
He is on the local futbol team (soccer for those Americans) and he is a goalie. He often goes home to visit his girlfriend, but not always because he has many friends here and is becoming more and more independent.

What is his goal?
His goal is to do fine dining and utilize his talent for great presentation; he can take a simple sandwich and present it in the shape of a heart. El Tio, who recently retired, took Leonardo under his wing and taught him many things. Other employees also enjoy teaching him their tricks of the trade because he has a wonderful attitude and willingness to do better.

Special Memory?
He was given an opportunity to use the things everyone taught him when he was chosen to do a private party. He said he loved the experience and he said he was told by his co-workers “Don't make us look bad.”
