How long has he been here?
Candido has been with Hotel Akumal Caribe for over 20 years. He first started out as a groundskeepers, he was promoted to the kitchen as a dishwasher, over the years he has moved up to Chef at the Snack Bar. His specialty, he tells us, is the club sandwich.

Where is he from?
Candido is from Kantunil, Yucantan. It is about 3 hours away and has about 10,000 people living there. He first came to Akumal with a friend when Yal-Ku was being developed. His friend, Adrian Beh was working for Oscar Constanza, the previous owner of the restaurant, and suggested Candido come work with them.

Something most folks don't know about Candido?
He loves to dance, watch TV and work in his garden. His family lives in Kantunil and on his days off he loves to go home to see his wife, 3 daughters, 2 sons and 3 grandchildren.

Favorite thing to do?
He loves to garden and to see things grow. He says he can't sleep all day like some people, he has to be up working in a garden. He said he use to spend his days off working in Laura's garden – he considers himself a “garden freak” and would like to one day spend all his time gardening and being with his family.
